1 (15-ounce) can garbanzo beans, undrained
1 cup tightly packed fresh spinach leaves (baby or regular)
1/2 cup tightly packed fresh parsley
1/4 cup tahini (sesame seed paste)
2 Tablespoons lemon juice
3 to 4 cloves garlic (or to taste)
1/2 teaspoon ground cumin
1/2 teaspoon sea salt
Crushed red pepper flakes, to taste
Combine all of the ingredients in a food processor or high powered blender such as a Vita Mix or Blend Tec.
Process or blend until completely smooth, stopping to scrape the sides (processor) or tamping down ingredients (blender) as necessary.
Serve immediately, or refrigerate in an airtight container.
*LuAnn's changes, substituted canned beans for beans cooked from scratch, reduced the amount of added liquid, increased garlic, omitted olive oil, omitted lime zest, changed lime to lemon juice (and increased amount), added cumin and red pepper, decreased salt, rewrote directions, added serving suggestions.
