6 ounces Veggie Crumblers
15 ounces Black Beans
1/2 cup Broccoli, Frozen
12 ounces Fat Free Refried Beans
225 grams Whole Wheat Tortilla
1 cup Red Onions
1 tablespoon Olive Oil
10 ounces Enchilada Sauce, Mild
1 cup Cauliflower
Pre-heat oven to 350 degrees F.
Slice onion and saute in oil until caramelized.
Add frozen veggie crumbles, corn, black beans and enchilada sauce. Heat until simmering.
Spray square baking dish with non-stick spray or lightly oil.
Lay tortilla shell on bottom and cover with layer of re fried beans.
Cover with 1/2 of taco mixture and ample layer of cheese.
Cover with tortilla shell and repeat layers. Top with remaining tortilla shell and sprinkle with cheese.
(Top tortilla shell and cheese will become very crispy - to keep moist, put light layer of taco mixture on top)
Bake for 20 minutes or until heated through.
