One of DH's favorite dishes to get for Chinese takeout is Singapore Rice Noodles (aka, Singapore Mei Fun, etc.) I decided to try to make it myself. I found several recipes on the internet that sounded similar to what they make at one of our favorite places. They all had a few ingredients that were different, but most used a lot of the same ingredients. I picked one for the basic recipe and added the veggies and meats (and of course, shrimp) and flavorings as desired. It turned out pretty good. I had way more rice noodles than needed because I added extra thinking it wouldn't be enough. So I will cut down on the noodles and change a few other things, but I will make it again. Now I have to write down what I did (and what I will change) so I will remember for next time.
