Frozen Fruit Salad

This is a good way to make use of fruit that isn't being eaten before it goes bad.

You can use just about whatever kinds of fruit you want. I used fresh pineapple instead of canned and fresh strawberries (cut up) instead of frozen, and I also added fresh blueberries. As long as you stick to the Cool Whip, cream cheese and sugar, you can do whatever you like with the fruit.

It isn't necessary to thaw the entire thing. I let it thaw just barely enough to slice all the portions, removing what we wanted to eat, and returning the remainder to the freezer. It might work well to freeze portions in lined muffin tins to have individual servings, as the whole block is hard to cut when it is frozen. Not sure, as it might be too thick, but it's an idea.

The original recipe said 9 oz. Cool Whip, but the container I had was 8, so that's what I used.

8 oz. Cool Whip
8 oz. cream cheese, softened to room temperature
3/4 c. sugar
2 bananas, sliced
large can of pineapple tidbits, drained
10 oz. frozen strawberries
1/2 c. chopped nuts
Mix together Cool Whip, cream cheese and sugar until smooth.

Fold in the bananas, pineapple tidbits, strawberries and nuts.

Gently mix well.

Add to the pan of your choice. (I lightly sprayed my pan with Pam.)

Freeze overnight.

Let thaw for at least 30 minutes before enjoying!
