I'm guessing it would work fine, especially since there is no cooking

involved that might change the properties of it. I don't use artificial sweeteners (except for DH's coffee), so I don't know much about them.

You could cut the recipe down a lot and just make a portion to see how it works out. I do that a lot when I try new recipes so I don't waste a bunch if we don't like it.
