Cranberry White Chocolate Oatmeal Cookies

2 cups flour
1 teaspoon baking powder
2 cups oats
2 sticks plus 2 Tablespoons butter, softened
1 cup dark brown sugar
1 cup white sugar
2 eggs
1 teaspoon vanilla
1 package Craisins (1 1/3 cups)
1 cup nuts, walnuts or pecans (Optional)
1 1/2 cups white chocolate chips

Cream butter and sugars, add eggs and vanilla. Stir in dry ingredients. Fold in nuts and Craisins. Roll tablespoons of dough into balls, place 1 1/2 inches apart on cookie sheets. Bake at 350 for 12- 15 min. You must leave them on the cookie sheet to cool about 5 minutes before taking them off or they will fall apart.

Note: I soak the Craisins in boiling hot water for about 5 minutes before adding to batter, then drain the water off. This plumps them up and removes some of the sugar.
