working out low carb (and relatively healthy) meals. Until now, I didn't realize how often I've been serving a filler (pasta, rice, potatoes, legumes) as one of the side dishes of the meal. I have to recall my home-economics class--main dish (meat/fish/chicken of some sort--animal protein), a green vegetable and a yellow vegetable. That's all well and good, but most yellow vegetables (other than summer squash) are high in carbs. Can have very few carrots, if any; same with acorn & butternut squash. Root vegetables seem to have more carbs.
Pasta is out, as well as rice. Corn and English peas are carb-y Even beans and lentils are out.
He's had to give up his (very carb-y) crunchy breakfast cereal and 1/2 a banana in the mornings (LOTS of carbs there) in favor of eggs and sausage or an egg/sausage/veggie muffin I found online. He's okay with that.
I wash lots of dishes these days.
