I have left butter out my whole life, as did my mother and my grandmother. I like it to be soft

enough to spread easily. However, sometimes in the summer I do have to put it away so I don't have a puddle in the butter dish. That is rare though, because when it is hot enough, I have my air on! This explanation of why it doesn't spoil may explain why I have found that skim milk spoils (in the refrigerator) quicker than whole milk does, and heavy cream and butter milk last for weeks. The fat content is higher.
