cuts of meat with all the fat trimmed off, but pay top dollar for them. I have always felt a little fat adds to the flavor of whatever you are cooking. I use real butter, not margarine or artificial "butter" and I am with you on adding salad dressing to a salad. In a restaurant, I DO ask for the dressing on the side as I want just a couple of tablespoons, not the half cup I think they drench it in at times. "Everything in moderation."
