Mix 1 teaspoon baking soda in 1/2 c. water to dissolve and pour over a small steak. Let soak for 15 to 20 minutes. Pour off liquid, pat dry and grill as usual. I did this last night and cooked it in a carbon steel pan to medium rare and it was more tender than if it had been marinated 8 hours! Apparently, you can do chicken and pork as well.
