If you mean the scummy or foamy substance,

that is protein that leeches from the meat while it's cooking. I don't know of any way to avoid it, but it rises to the top as the chicken starts to cook, and you can skim (most of it) it off early in the cooking.

Another idea is not to let your MIL watch you wash the chicken afterward. grin
