In this particular instance...

... I was cooking the chicken in a pressure cooker (the old fashioned kind of pressure cooker!), but I have noticed the problem in some crockpot dishes too. I may have cooked the crockpot meats at "high"... I will have to explore this more.
I have a chicken soup recipe that mentions the skimming as an important first step, but had not thought of trying it on other things.
