:rectnt focaccia :oed

focaccia
Ingredients:
1 pkg.dry yeast
1 1/2 C lukewarm water
4 C flour
1 tbs sugar
1/2 cup finely chopped onion
2 tsp salt
dried rosemary to taste
oil and salt as needed
Instructions:
Add sugar and yeast to warm water. Stir and let stand until it starts foaming. Add flour, salt, and onion. Knead until smooth. Place in large oiled bowl and let rise til doubled. Punch down and place on a rimmed oiled cookie sheet to about 1 " thick. Oil top of dough, let rise til doubled. Sprinkle with salt and rosemary. Bake at 400 degrees for 20 -25 minutes.

Use olive oil and sea salt for topping dough. If you think the onions and rosemary wouldn't be tasty with your recipe leave them out

I didn't see any cheese listed? *NM*
The original recipe didn't use cheese. It was from Monti's La Casa Vieja in Tempe Az *NM*
I've used parmesan, but romano, asiago or even sharp cheddar would be good. I don't know what yours
