Taco Turkey Medallions
Pillsbury Fix It Fast Cookbook
Dinner ready in 25 minutes or less
1 package (1.25 oz.) taco seasoning mix
2 Tablespoons all~purpose flour
1 lb. fresh turkey breast tenderloins, cut crosswise
into 1/2 inch slices
1 Tablespoon olive or vegetable oil
1 cup chunky-style salsa
2 Tablespoons honey
2 Tablespoons chopped fresh cilantro, if desired
1. In large resealable food storage plastic bag, combine taco
seasoning mix and flour, mix well. Add turkey slices; seal bag and shake to coat.
2. Heat oil in 10 inch nonstick skillet over medium-high heat until hot.
Add turkey; cook until brown on both sides.
3. Add salsa, honey and any remaining coating mixture; mix well.
Reduce heat to medium low; cover and simmer 5 to 10 minutes or until turkey
is no longer pink in center, stirring occasionally. Sprinkle with cilantro if desired.
Quick Fix While the turkey simmers, cook some instant white rice to serve with the
medallions. It's the perfect side to soak up the delicious sauce!
