Thanks! To back me up, I just got a promo magazine from Cook's

Country/America's Test Kitchen and they had a little article on the subject. They said bring 1 " water to a boil over high heat, add steamer basket and eggs to the pan, cover, reduce heat to medium low and cook for 13 minutes. Plunge into ice water for 15 minutes and peel away. But they didn't say why they peeled easier, so....

It has to be something to do with loosening that inside membrane
